Chugoku

Chugoku's food culture splits dramatically between the San'in coast (Tottori, Shimane) facing the Sea of Japan and the San'yo coast (Okayama, Hiroshima, Yamaguchi) along the Seto Inland Sea. Each side developed distinct culinary traditions — from Izumo soba to Seto Inland Sea fish dishes — many of which are at risk of being lost as rural communities age.
